A yummy Sunday afternoon treat, easy to make, topped with cinnamon and sugar…
You’ll need:
2 Cups of pumpkin, cooked and mashed
2 Cups of self-raising flour OR all purpose cake flour (if you use all purpose flour, add 1 teaspoon of baking powder)
1–2 Eggs
Warm water
A pinch of salt
Method:
Sift the flour, baking powder, and salt.
Add the warm water, egg/s and pumpkin.
Combine/mix gently until smooth.
Heat a bit of oil in a pan.
Add spoonfuls of the mixture to the pan to fry.
Dust with cinnamon and brown sugar while warm and serve!
*I adapted this recipe, playing around with measurements until we were happy with the taste. When I make these fritters, I mainly work by taste (a pinch of this, a spoon of that…) so I’ve tried to be as accurate as possible when providing measurements of ingredients for this recipe.
Lekker. You can add fine nutmeg to season with the cinnamon sugar.
